Making Quality Maple Confections and Value Added Workshop

On Saturday, September 27th, 2008 a one-day Maple Confections Workshop beginning at 9 am to 5 pm will be presented at Cornell Cooperative Extension of Oswego County Environmental Center located on Route 183 in Williamstown, NY.  This workshop is part of the Cornell University Maple Program and is being conducted by Mr. Stephen Childs, NYS Maple Extension Specialist from Cornell University.  It will feature training and hands-on experience in making maple confections.  The cost of the workshop is $55 for first person from each farm/business and $10 for each additional person from the same farm/business to cover cost of lunch.  Registration fee includes syrup testing tools, materials, and confections notebook and lunch.

Registrations are limited and will be based on a first come, first served basis.  This workshop will be suitable for very experienced as well as novice confection makers.  Each participating maple farm will receive a New York State Maple Confections notebook, appropriate tools for measuring invert sugar in maple syrup, as well as a digital candy thermometer.  These tools alone are valued well above the registration fee.  Each participant will need to bring one quart of syrup (light, medium or dark) to be used in the program.
