Making Quality Maple Confections and Value Added Workshop II

On Saturday, September 26th, 2009 a one-day Maple Confections Workshop from 9 am to 4 pm will be presented at the Cornell Cooperative Extension of Oswego County Amboy 4-H Environmental Center located on Route 183 in Williamstown, NY. This workshop is part of the Quality Improvement and Market Expansion for New York Maple Value Added Products Project sponsored by the New York State Farm Viability Institute and Cornell Maple Program and is being conducted by Mr. Stephen Childs, NYS Maple Extension Specialist from Cornell University. This workshop is designed to enhance producers’ skills and provide demonstrations on making many related confection products. Topics to be covered include: ? Maple suckers and hard candy; ? Maple coating nuts; ? Maple soft drinks; ? Maple straws; ? Maple smoothie; ? Maple cotton; ? Maple marshmallow; ? Maple jelly; ? Maple sugar packets; and, ? Inverted maple syrup in confections

Each participating maple farm will receive an update to their NY Maple Confections Workbook. NY Maple Confections Workbooks will be available for sale if you do not already have one. The cost of the workshop is $20 for first person from each farm/business and $10 for each additional person from the same farm/business and includes update materials, breaks, and lunch.

Registrations are limited and will be based on a first come, first served basis. This workshop will be suitable for very experienced as well as novice confection makers. Each participant will need to bring one quart of syrup (any color or grade) to be used in the program.
