Invested in the initiative, Exceptional Education teacher Brian Barfoot agreed to allow Career and Technical Education cosmetology students to give him a red Mohawk haircut if the total sales of healthy foods in April exceeded the amount sold in March.

Sure enough, the students took up the challenge and succeeded.

As promised, Barfoot got a red Mohawk haircut to celebrate healthy eating.

“We are trying to change the image of the café to one that provides healthier snacks to students,” said Barfoot. “The idea was to have the April sales of healthy items beat the March sales, and the students beat the goal by a long shot.”

The “Smart Snacks in School” campaign through the USDA requires that foods sold a la carte, in a school store or in a vending machine meet nutritional standards regarding fat, calories, sodium and more.
